My REQUIRED CRITERIA
for Spring/Summer Cooking:
- DELICIOUS
- FAST & EASY
(so we can get back outside to PLAY & enjoy the sunshine rather than staying in the kitchen!)
I’m going to lead you through a DAY
of cooking some great warm weather recipes
WARNING – I would NOT suggest making ALL of these dishes in ONE day…you might EXPLODE if you do!
The first recipe I’ll show you:
*Breakfast*
ok…did you get your coffee? Now let’s make breakfast
Crepes
Ingredients:
- 1 cup flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- optional - sometimes I add 1/2 tsp vanilla or almond extract depending on the fillings I’m planning on using
In the bowl it all goes
and we whisk whisk whisk
coat pan with nonstick spray and heat over low to med heat
place about 1/4 cup batter in the pan
and swirl it around to cover the bottom of the pan
cook for about a minute (teeny tiny bubbles will show),
turn over for just a bit to cook the other side
and then flip out onto your plate
butter (just a little or a lot if ya really want)
The kids love when we add some premixed cinnamon sugar
which I keep in a little mason jar
Roll the crepe up
and
add your toppings of choice
we had chocolate syrup, strawberries and whipped cream
mmmm!
(this is one I’ve shared on the blog before but it is THAT good!)
now we’re moving on to
*Lunch*
Tuna Salad
Ingredients:
- 1 package rings (or small shell) noodles
- 2 to 3 stalks celery, finely chopped
- 1/4 cup onion, finely chopped
- 1 cup mayo
- 1 cup miracle whip
- 1 cup peas (fresh, frozen/thawed, or fresh)
- 1 tsp old bay spices
- 1 (or 2 if ya like tuna a lot) can tuna, drained (you can use chicken too if you like)
- 1 or 2 tsp old bay seasoning and/or paprika for on top
Boil the noodles up, strain, rinse and cool. Mix rest of the ingredients together (add more or less mayo to the consistency you prefer)
Pour yourself a glass of iced tea, go sit in an Adirondack chair and enjoy!

*Snacktime*
Best Guacamole Ever
Let’s get started
Grab down a bowl
Ingredients:
- 4 to 6 roma tomatoes
- 2 avocados
- 1/2 red onion, chopped
- small splash of olive oil
- garlic salt
- 1 diced jalapeno
- a handful of chopped cilantro
- lime
Mix the oil, garlic and jalapeno. Chop and add in the other ingredients. Squeeze lime over the top & Chill!
tip: score your avocado when it’s still in the skin & then turn it inside out and all the cut chunks will just fall into the bowl!
Serve with tortilla chips.
NOTE - This snack can be served with dinner below as well…

*Dinner*
Mexican Shredded Pork Tacos
3 pounds Pork Roast, cut into large pieces trimmed of fat, etc.
3 garlic cloves minced (or a couple scoops of jarred garlic)
1 small can diced green chilies
1 small can chipotles in adobo sauce – chopped
1 cup water
cilantro – finely chopped
lime juice
Dump errr I mean…Gently place the meat, chilies, garlic, & adobo sauce and the water in a crockpot on low for 8-10 hours.

Now this is when you…
Go outside and spend some time in the garden or head to the beach
when you get home…it will looks like this
At end of cooking time, take two forks and shred it up
Serve with tortillas, the chopped cilantro, lime wedges, lettuce, tomatoes, hot sauce, sour cream, etc., etc., etc.
Of course the GUACAMOLE you made earlier, too (if there’s any left)!
We frequently serve this with rice (inside the burritos too!)
Just cook the rice as usual but add some chopped cilantro in with the water & when it’s done cooking, fluff with a fork and add butter, garlic and lime juice…mmmmm!
a little trick with our sour cream – add a bit of milk to make the consistency smoother – mmmm – so good – really, try it!
and you might just want to have one of these as well to top off the night (I haven’t tried this yet but I sure am GONNA!):

I love this post! I'm always on the look out for new meals to try. You can bet I'll be trying every single one. I'm a little nervous about the crepes. I've never made or tasted one EVER!
ReplyDeleteOh my you have picked out my favorites!! I love guacamole and tuna salad is one of my absolute favorites! I got a great skillet at a yard sale a few weeks ago that I think will be perfect for crepes which I have been wanting to make. I cook with cast iron and you just cannot do crepes or omelets in those!

We're definitely on the same page with the pork tacos AND the guac! We have an avocado tree and I've (not so patiently) been waiting for the little guys to be big enough to pick. Then...guacamole all summer long! :)
