COMFORT FOOD: French Onion Soup Recipe

Both my kids adore this savory soup recipe
- even though it is mainly
comprised yes {surprise!} of onions!

They actually asked “Does French Onion Soup actually, technically have onions in it?” 
to which I replied….”ummm, yes….”

and they said “well, I guess I still like it – they must have different onions in France!”

Ha!  Sure!

Here’s how to whip up a batch of your own:

* You’ll need 3 or 4 yellow onions (thinly sliced)

As with almost anything else
worth eating
this contains butter –
real good yummy butter.

Melt 1/2 stick butter (only 1/2 a stick that’s not actually too bad, right?) and sauté the thinly sliced onion for about 20 minutes (stirring occasionally)

then add 2 T flour

add a carton of beef broth

and about a cup of water

Simmer all together to meld the flavors
for at least 1/2 hour

Now scoop some soup into a ramekin,

top with a slice of french bread

and a slice of provolone cheese

Pop in the oven and
BROIL for just a few minutes

Watch it to your desired
melt-y gooey done-ness!

{It won’t take but a couple minutes!}
