I’ve had a version of this recipe in my files for years…
I got it from a co-worker from one of my first jobs ever (many many ahem…many years ago!)
I was cleaning out the file and happened upon it and thought I’d spiff it up a bit and make it my own
I think the thing that makes this recipe sooo good is the
green pepper.
For those of you who don’t like green pepper…let me tell ya - I’m not usually hooked on green peppers either. I’m not a hater…but ehhhh…I can take em or leave em
for this recipe though – gotta include them
Here’s the lowdown
SPAGHETTI PIE
Get a pot of water boiling and prepare 1/2 # angel hair pasta according to package direction.
While that’s going:
1 # ground beef, browned & drained, return to pan
1/2 green pepper & 1/2 onion, finely diced added the beef & sautéed up
Add one jar of your favorite pasta sauce (or homemade if you like)
In a large bowl, combine 1 carton cottage cheese, 2 eggs & one cup parmesan cheese (& a couple shakes of garlic salt too)
Now your noodles are done…drain them and place in a 9x13 pan
Pour 2 T melted butter over the noodles
Cover with the cottage cheese mixture
Cover with meat sauce
Cover with foil & bake at 350 for 45 minutes
Add a layer of shredded cheese (mozzarella - I used colby jack because it’s what I had on hand) for an additional 5 to 7 minutes until melted and ooey gooey good!
p.s. leftovers are yummy too!
