Remember a little while back I posted our fav recipe for chocolate eclairs? The recipe included the filling (a luscious pastry cream)…well…after you get done filling the eclairs you would probably have quite a bit of pastry cream left over.
hmmm…what to do with it? eat it all directly from the bowl and lick it clean (yeah it IS that good) and I admit I did have a
couple huge spoonfuls but then decided to make it into something a little heartier and make use of all this wonderful summer fruit surrounding us.
So to create….just use your leftover chilled pastry cream (or whip up a new batch just for this purpose if chocolate eclairs aren’t on your radar!) and then add any chopped fruit of your choice.
I added handfuls of chopped apple, banana, nectarine, grapes, pineapple, some mini-marshmallows and a bit of coconut flakes.
We ate it outside in the sunshine surrounded by zinnias from our garden. It’s a toss up between zinnias, sunflowers or peonies as my favorite flower (but who has to choose when you can have them all in their own time!)
happy day to you all!!
