{Delightful Fruit Salad}

Remember a little while back I posted our fav recipe for chocolate eclairs?  The recipe included the filling (a luscious pastry cream)…well…after you get done filling the eclairs you would probably have quite a bit of pastry cream left over.

hmmm…what to do with it?  eat it all directly from the bowl and lick it clean (yeah it IS that good) and I admit I did have a couple huge spoonfuls but then decided to make it into something a little heartier and make use of all this wonderful summer fruit surrounding us.

So to create….just use your leftover chilled pastry cream (or whip up a new batch just for this purpose if chocolate eclairs aren’t on your radar!) and then add any chopped fruit of your choice.

I added handfuls of chopped apple, banana, nectarine, grapes, pineapple, some mini-marshmallows and a bit of coconut flakes.

ohhhhh YUM!!!

We ate it outside in the sunshine surrounded by zinnias from our garden.  It’s a toss up between zinnias, sunflowers or peonies as my favorite flower (but who has to choose when you can have them all in their own time!)
