Creamy Pineapple Cake–YuM!

I thought I’d re-share some of my all-time favorite spring recipes for the next couple posts…enjoy!!

Ready for a
fun and yummy recipe??
This one comes with a bonus!!
You can use stuff up from your pantry too!
Take 1 cake mix (yellow or white) and bake according to directions
While that’s baking, take 1 (20 oz) can pineapple (crushed or tidbits) – pour (with juice) in a saucepan, add 1 cup sugar, heat until sugar dissolves, bring to a boil and then remove from heat.
Take 2 small packages of pudding
{vanilla or banana, etc – again, whatever you have in the pantry} and make according to directions, let set in the fridge.
Spread  1 1/2 cups coconut on a baking tray
and toast in the oven
tick tock tick tock…okay - now your cake is done and out of the oven, right?

poke holes in it with a fork
{stab stab stab away!} - mmmwwhhhhahhhahh!!
Now that you’ve gotten your aggressions out on the cake…Pour the pineapple and juices over the cake
Let the cake completely cool, then slather the pudding over the top and then spread whipped cream (real whipped cream, cool whip or dream whip etc.) for the top layer
Sprinkle with the toasted coconut and Chill for at least an hour
This cake has tons of variations too!
sometimes I add raspberries or strawberries
sometimes a layer of banana,
sometimes a layer of hot fudge or hazelnut spread
(I know YUM right?)
Creamy Pineapple Layer Cake…Tropical Slush Cake…no matter what you want to to call it…it’s good!
Happy Spring, y’all!!
