{Easy Crockpot Shredded Beef Sandwiches}

Did you know it is HaRD to photograph beef!!  Who would have thought!!

Here is why this is one of our go-to recipes…

#1 It is EASY – which is always good in my book.  Who isn’t busy these days?  It is sooo nice to come home after a full day to a dinner just about ready to eat.

#2 ummm yeah delish – Really YuMMY!  The kids scarf it down

#3 Leftovers (if there are any!!) heat up great and make a kickin lunch the next day!  Bonus!

This recipe was shared by a dear friend, neighbor, substitute mama.  She is generous with her time and her yummy recipes (good friend to have!)

1 Beef Roast (about 3 pounds frozen or fresh)
1 large jar of dill pickles
1 can of diced green chilies
2 cloves of minced garlic (or a couple teaspoons of jarred garlic) 

That’s it….just throw it all in the crockpot (pickle juice and all!), cook all day 8-10 hours on low.  At the end of your cooking time, remove the pickles (reserve and chop them up for a yummy relish if you’d like to add on top of the sandwiches or toss them), shred the meat.  Done!!

We like it on soft yeast rolls spread with a bit of cream cheese.  YuM!!
