This was one of the first desserts I made as a newly married girl…loooonggg time ago.  I received the recipe from a co-worker.  She worked in our legal department and she had it together.  You know what I mean?  She did an amazing job, was gracious to everyone, had a great family life, looked pulled together AND could cook up some amazing treats.  I still want to be like her when I grow up.  When I asked her for the recipe, she promptly brought it back to me…TYPED (at 120 wpm!!)  ha!

I have a large raspberry patch (this year a little out of control – I’ll have to clear it out come fall/spring to make it tidier for next year) but it is getting ready to BURST with ripe, red, yummy berries.  One of the best things EVER is to pick a berry and pop it in your mouth…a flavor explosion of red, juicy bits warmed by the sun – serious YuM!!

My son & I tackle our raspberry patch together….we weed together (chatting about life) and then we pick the berries together (still chatting up a storm – our conversations often lead to video game strategy – ugh!) and then we whip up yummy recipes together (still chatting!!)

{Northern Cottage} - How to Make RASPBERRY JAM!!

Last year we made many, many batches of jam and still have a good supply in the pantry so I imagine many a recipe (I’m thinking scones, smoothies, pie, just on ice cream, in cereal –  mmmm!!)

Hopefully, we’ll be able to gather enough berries to accomplish all that!  In anticipation of our raspberry harvest, I whipped up this recipe recently…what a treat.

Raspberry Dessert{NorthernCottage}

Creamy Raspberry Layered Pretzel Dessert

2 c crushed pretzels (I use the small twists)
3/4 c melted butter
2 T sugar

Mix together and pat into 9x13 pan.  Bake 10 minutes at 350 degree.  let cool completely (important so middle layer will set)

Blend together 1 c sugar and an 8 oz package cream cheese (softened).  Fold in 16 oz cool whip.  Spread on top of cooled crust layer.  Refrigerate about 45 minutes to set.

Top Layer: 6 oz pkg raspberry jello, 2 c boiling water, two 10 oz pkgs frozen raspberries

Stir jello until dissolved, add raspberries.  The frozen raspberries should cool the jello mixture.  If the jello mixture is too warm, it will seep into the middle layer.  Pour cooled jello mixture over cream cheese layer.  Let set overnight.  * If using FReSH raspberries, you must let jello mixture cool completely before adding to cream cheese layer (or it will seep)

Enjoy!!  Delicious on a hot summer night, for an upcoming BBQ….and leftovers are awesome the next morning (just sayin’!!)
