Homemade Chicken Tetrazzini {NORTHERN COTTAGE}

We found a new FaMiLY FaVoRiTe!!

It all started with this pin from here – YuM!  This recipe reminded me of a yummy local restaurant that has a fab chicken tetrazzini on their menu – & I decided to try to re-create.

So I used the beginnings of that pin as my base (so delish!) & added more garlic and fluffed it up a bit for my family!

Served with spinach (yes my kids LoVe SPiNaCH – they’re weird like that – love it!)  and some cheesy garlic bread (because we can’t get enough cheese or butter or garlic…apparently)

here are the ingredients for the chicken seasoning/rub

♥ 1/2 tsp salt
1 1/2 tsp chili powder
1 1/2 tsp onion powder
2 tsp garlic powder
1/4 tsp cayenne pepper

Combine above and sprinkle on (rub it on in!!) to 2 lb chicken tenders (I take chicken breasts, remove and bit of yuck – you know what I’m talking about! and slice into about 3 even strips)

♥ 1/4 cup butter, divided
♥ 2 cloves of minced fresh garlic (or a couple teaspoons of jarred garlic)
♥ 1 tsp salt

2 cups heavy cream

If serving over pasta, get that going now.

In large skillet, melt half of the butter over medium-high heat.  Brown the chicken tenders until done on all sides and golden brown, about 8 minutes.

Place remaining butter into the skillet (feel free to add a few more bits of butter if ya like – we like!), when melted, add the garlic, a teaspoon of salt (& just a splash of white wine if you happen to have a glass nearby – if not it’s still great without!)  Now add the cream, lower the heat and simmer until the sauce thickens up a bit (5-7 minutes or so).

Pre-heat your broiler, place a serving of cooked, drained noodles in a heat-safe bowl, add some chicken and that delightful yummy sauce, place a layer of provolone cheese over the top and place in the broiler.  Cook for a minute or so (watch as it starts bubbling and browning up quickly)

Carefully transfer from that bowl to a dinner plate (so you’re not eating from or serving kiddos a sizzling hot bowl!!) 

You can serve this over pasta of your choice (angel hair, fettuccine, etc) or rice or mashed potatoes – all good!!  This would be yummy on wild rice too!
